Star Wars Legends: Republic Comics:
Alpha-17/Obi-Wan Kenobi: These two got into so many scrapes in the comics that some hurt/comfort would be appreciated! Or maybe Obi-Wan visits Alpha on Kamino while Alpha is attempting to train cadets. Or they have to go under cover together for a mission! Any moments of them being their snarky selves with each other, but still taking care of each other.
Fay/Shmi Skywalker: Both amazing women who got little time to shine in the canon. So what would change if these two were to meet? This could be before or after TPM or maybe Fay rescues Shmi before the Clone Wars and the two of them go traveling together.
Zule Xiss/Aayla Secura - Zule survive Jabiim and she and Aayla team up! Or they both survive Order 66 and work together to survive/figure out what happened! Or these two have a mission together where they have to pretend to be a couple!
Star Wars Prequel Trilogy:
Padmé Amidala/Sabé: Oof these two! Padmé lives AU where she and Sabé raise the twins together while on the run. Padmé never gets with Anakin because she only has eyes for Sabé AU. Padmé and Sabé on a mission together!
Shaak Ti/Shmi Skywalker: Both these wonderful moms deserved better! Shmi lives AU where she goes to Kamino to help and both she and Shaak fall for each other. Shaak is sent to Tatooine post TPM to find out more about Shmi and Anakin and the two fall for each other. Shmi and Shaak meet post TPM and Shaak doesn't realize Shmi is Anakin's mom and Shmi doesn't realize Shaak is a Jedi.
Obi-Wan Kenobi/Owen Lars/Beru Whitesun: AU where Owen and Beru don't let Obi-Wan live on his own and the the three eventually fall for each other. Or the three of them have to leave Tatooine with Luke and they eventually fall for each other. Learning how to be a moisture farmer is difficult, Obi-Wan doesn't realize how his determination to learn is attractive to both Owen and Beru.
Depa Billaba/Shmi Skywalker: Depa is sent to Tatooine post TPM to find out more about Shmi and Anakin, but she doesn't expect to fall for Shmi.
Bail Organa/Breha Organa/Obi-Wan Kenobi: When would they get together? Would it be during the Clone Wars? Or would it be post Order 66? Or maybe a no Order 66 AU? All three of them have very important jobs that keep them busy so how do they make time for each other?
Padmé Amidala/Bail Organa/Breha Organa: Padme Lives AU? Or Padmé offers to surrogate for Bail/Breha and oops they all fall for each other. Or Bail/Breha and Padmé tell the public she's a surrogate for them while she's pregnant with the twins so she doesn't have to try and hide it and doesn't have to reveal who the father is...and then they all fall for each other.
Bail Organa/Breha Organa: Curtain fic? Something sweet and domestic? Celebrating their anniversary! Spending time with each other when they are both very important busy people.

Rex/Hera Syndulla - I would very much enjoy friends to lovers tinge by grief for these two. That they find comfort in each other after having both lost so much! Rex helps raise Jacen! Hoth fic.

Cody and company get help against the Separatists from a mysterious stranger and Cody's grateful..it doesn't hurt that he's attractive either. Everyone lives and they defeat the Sith AU?
